Your friends and family will find it hard to resist these festive red and green gumdrop holiday cookies. Not to mention, they are extremely easy to bake.
Begin by coating sharp kitchen scissors with the nonstick cooking spray. Then take your 1/4 cup of mini red gumdrops and snip them finely with the kitchen shears. Once finished, toss the remaining slices of red gumdrops with the 2 teaspoons of sugar. Repeat this process with the 1/4 cup of mini green gumdrops and the remaining 2 teaspoons of sugar.
Ready your clean, 1 quart glass jar or container to be filled with a layer of each of the ingredients listed above. The first layer within your container should be the 1 & 3/4 cups of all purpose flour followed by the 1/2 teaspoon of baking powder, 1/4 teaspoon of salt, the 1/4 cup of snipped and sugar coated red gumdrops and lastly the 1/4 cup of snipped and sugar coated green gumdrops. Place the additional 8 ounces of white chocolate and 40 gumdrops in a separate resealable plastic bag that you will later attach onto the jar. This Christmas Drop Cookies in a Jar Recipe has a shelf life of one month in a cool/dry place and makes around three dozen cookies. Remember to place baking directions with your cookie jar recipe.
Begin by preheating your oven to 350 degrees Fahrenheit. Next, you will want to prepare a large cookie sheet with either non-stick foil or parchment baking paper. Set aside the baking sheet and two sealed bags of white chocolate and 40 gumdrops. Now, grab a large mixing bowl and empty the entire contents of the jar with 1/2 cup of softened butter, 1 teaspoon of vanilla, and 1 egg. Combine well. Once the batter has come to a smooth consistency it will be time to roll the dough into around 40 - 1 inch balls. Set these balls two inches apart atop the pre-prepared cookie sheet that you had originally set aside. Utilizing your thumb, create an indentation within the center of each and every dough ball. In the center of these indentations place one gumdrop (from the 40 gumdrop bag). Bake the Christmas Drop Cookies for about 10 minutes depending upon the strength of your oven. Let the cookies cool on a wire rack for about five minutes or so. In a separate small saucepan heat up the 8 ounces of white chocolate with cocoa butter on low heat until the chips have thoroughly melted. Stirring constantly. Once completed, drizzle the white chocolate over the tops of the cooled Christmas Cookie Drops and let stand until the chocolate has set/hardened for around 5 - 10 minutes.
*Any uneaten cookies should be stored in layers of wax paper within an airtight container at room temperature for three days maximum of frozen for up to three months.
